In this short video, it will take you through the use of very high quality human photo sets for more realistic characters. These photo sets contain pictures from pretty much every angle, which makes it easy to find image areas that work extremely well when filling an entire unwrapped UV set. The video also guides you in the theory of color matching the layers and blending them together to create a seamless and realistic end product.
The Daz Studio platform is utilized in this video, although the principles can be applied to any 3D platform where unwrapped UV’s are present.

This is great, thanks! How do you go about this when you're only wanting to texture a head/face?
And in particular, what about a head that doesn't have a pre-existing texture map?
