It is possible to change the thumbnail for an already existing gallery-entry? I would like to unify it for a better gallery-feed experience.

To my knowledge it is not possible, and even to change the main image when there are several.

Sorry, but that is not possible right now.
There is already an open feature request for this. Hopefully, we will see it added in a future website update.
I have added a link to this thread in the feature request so the coders will see it.
