Am I allowed to create a thread for each product I submit? The purpose behind this would be to basically add all my readme and attribution info as well as any changes/updates so people have the info prior to purchase.
With the attributions, I include links to all the products I use in my promo pictures which will include other stores. Is that allowed?

Yes, feel free to start a thread for each of your products in the Product Showcase.
That's exactly what it's for. You can put whatever details you want there, and update each thread as you see fit.
You are also free to add links to products on other marketplaces "as useful information".
RenderHub just does not allow external links where the sole purpose is advertising something not on RenderHub.

RenderHub internal links are allowed in product descriptions.
